Chicken Fajita Nachos

INGREDIENTS

2 1/2 cups shredded cooked chicken
1 package  Spices & Seasonings for Fajitas
1/3 cup water
8 ounces tortilla chips
1 1/4 cups  grated Cheddar cheese
1 cup grated Monterey Jack cheese
1 large tomato, chopped
1 can sliced ripe olives, drained
1/4 cup sliced green onions
Salsa

DIRECTIONS

In medium skillet, combine chicken, Spices & Seasonings for Fajitas and water; blend well.

Bring to a boil; reduce heat and simmer 3 minutes.

In large shallow baking dish, arrange chips.

Top with chicken and cheeses.

Place under broiler to melt cheese.

Top with tomato, olives, green onions and desired amount of salsa.

Makes 4 appetizer or 2 main-dish servings.

Tangy Meatballs

INGREDIENTS

1 lb. ground beef
1/2 cup salsa, divided
1/4 cup fine, dry breadcrumbs
1/4 cup shredded Monterey Jack cheese
2 tbsp. finely chopped green onions
2 cloves garlic, minced
Cooking spray
3/4 cup sour cream

DIRECTIONS

Combine beef, 1/4 cup salsa, breadcrumbs and next 3 ingredients in large bowl; stir well. Shape beef mixture into 48 (3/4″) balls. Place meatballs on rack of broiler pan sprayed with cooking spray. Bake at 400° for 20-25minutes or until done. Drain on paper towels.Combine sour cream and remaining 1/4 cup salsa, stirring well. Serve warm meatballs with sour cream sauce mixture.

Makes 16 Meatballs
