Orange Oatmeal Muffins

INGREDIENTS

1 cup rolled oats
1/2 cup orange juice
1/2 cup boiling water
1/2 cup butter
1/2 cup packed brown sugar
1/3 cup white sugar
2 eggs, lightly beaten
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract

DIRECTIONS

1. Preheat oven to 350 degrees° F . Grease muffin pans.

2. In a small bowl soak the oats in orange juice and water for 15 minutes.
3. In a large bowl cream together butter or margarine and sugars. Beat in eggs and oat mixture.
4. In a separate bowl, blend flour, baking powder, soda, salt, and nutmeg. Stir into batter. Stir in vanilla. Spoon batter into prepared muffin pans, filling 2/3 full.
5. Bake at 350°F until golden brown, about 20 minutes.

Chocolate Zucchini Bread

INGREDIENTS

3 eggs
1 cup oil
2 cup sugar
1 Tbsp. vanilla
2 cups shredded, peeled zucchini (about 1 medium)
2 1/2 cups flour
1/2 cup baking cocoa
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
1/4 tsp. baking powder

DIRECTIONS

In a mixing bowl, beat eggs, oil, sugar and vanilla. Stir in zucchini.

Combine dry ingredients; add to zucchini mixture and mix well.

Pour into 2 greased 8×4x2-inch loaf pans.  Bake at 350° for 1 hour or until bread tests done.

Makes 2 loaves

Onion Zucchini Bread

INGREDIENTS

3 cups flour
3/4 cup chopped onion
1/2 cup grate Parmesan cheese, divided
5 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 cup buttermilk
1/3 cup oil
2 eggs, lightly beaten
3/4 cup finely shredded zucchini

DIRECTIONS

In a bowl, combine flour, onion, 6 tablespoons of the Parmesan cheese, baking powder, salt and soda.

In a small bowl, mix buttermilk, oil, eggs and zucchini; stir in flour mixture just until blended.

Spoon into a greased 9-inch round baking pan.  Sprinkle with remaining Parmesan cheese.

Bake at 350° for 40 minutes.

6 to 8 servings

Honey Oat Bread ABM

INGREDIENTS

1 cup buttermilk
1 egg
1/4 cup warm water
2 tablespoons honey
1 1/2 cups whole-wheat flour
1 1/2 cups all-purpose flour
1/2 cup quick-cooking oats (Not cooked)
2 tablespoons vegetable oil
1 1/2 teaspoons salt
1 1/2 teaspoons active dry yeast

DIRECTIONS

Place all ingredients in your machines fully assembled pan and in the order
specified by your machines manufacturer. Select the Basic or White cycle
and press start. After the first 10 minutes of kneading check the dough and
make any necessary adjustments.

Hamburger Buns

INGREDIENTS

1/2 cup warm water (105 to 115 ° F)
2 packages active dry yeast
3/4 cup warm milk (105 to 115 ° F)
1/4 cup sugar
3 tablespoons butter or margarine
1 1/2 tablespoons instant minced onion, optional
2 teaspoons salt
4 3/4 to 5 1/4 cups all-purpose flour
3 eggs (divided use)
Instant minced onion or poppy seed, optional

DIRECTIONS

Place warm water in large warm bowl. Sprinkle in yeast; stir until dissolved.

Add warm milk, sugar, butter, 1 1/2 tablespoons instant minced onion (if
desired), salt and 2 cups flour. Blend well.

Stir in 2 eggs and enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 4 to 6 minutes.

Place in greased bowl, turning to grease top. Cover; let rise in warm, draft-free place until doubled in size, about 30 to 45 minutes.

Punch dough down. Remove dough to lightly floured surface; divide into 8 equal pieces. Form each piece into smooth ball.

Place on large greased baking sheet. Flatten balls to 4-inch rounds; cover.

Let rise in warm draft-free place until doubled in size, about 20 to 40 minutes.

Lightly beat remaining egg and brush it on the rolls. If desired, sprinkle with instant minced onion or poppy seed.

Bake at 400 ° F for 10 to 15 minutes or until done.

Remove buns from baking sheet and cool on wire rack.

Jalapeno Hush Puppies

INGREDIENTS

1 (8 ounce) package Martha White Hush Puppy Mix with Onion
1 tablespoon chopped jalapeno pepper
1/2 cup chunky salsa ( heat level your choice and also brand )
2/3 cup water

DIRECTIONS

Heat 2 to 3 inches oil in deep fryer or heavy skillet to 365 degrees.

Combine hush puppy mix and remaining ingredients in medium bowl; stir until well blended. Let batter stand for 5 minutes. Do not stir. Drop batter by rounded teaspoonfuls into hot oil. Fry until golden brown, turning several times. Drain on paper towels. Serve warm.

Makes about 14 hush puppies

Praline Apple Bread

INGREDIENTS

2 cups flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup sour cream
1 cup sugar
2 large eggs
2 tsp. vanilla
1 1/4 cup peeled and chopped Granny Smith apples
1/2 cup toasted chopped pecans
1/2 cup chopped pecans
4 tbsp. butter
1/4 cup brown sugar

DIRECTIONS
Preheat oven to 350 degrees F. In a medium bowl, whisk together flour, baking powder, baking soda and salt. In a large mixing bowl, beat together sour cream, sugar, eggs and vanilla until well combined (about two minutes). Add dry ingredients and mix just until combined. Fold in apples and toasted pecans. Scoop the mixture into a 9×5-inch loaf pan coated with nonstick spray. Scatter the top with the regular pecans and gently press into the batter. Bake until a toothpick
placed in the center comes out mostly clean with a few moist crumbs attached, about 50 to 60 minutes; if the bread looks like it is getting very browned on top, cover with foil during the last 10 to 15 minutes. Remove and place the pan on a wire rack to cool for 10 minutes. While loaf is cooling, in a small sauce pan combine butter and brown sugar. Bring to a boil, then reduce
heat and gently boil, stirring, for 1 minute. Turn bread out onto the rack and drizzle the top with the brown sugar mixture.

Peanut Butter Banana Bread

INGREDIENTS

1 cup sugar
8 tbsp. (1 stick) butter
2 large eggs
2 cups flour
2 or 3 bananas, mashed
1/2 cup creamy peanut butter
1 tsp. baking soda
1/2 cup peanuts, chopped, divided

DIRECTIONS

Preheat oven to 350°F. Grease a 9×5 inch loaf pan.

Combine sugar and butter in a large bowl. Beat with an electric mixer set at medium high speed until smooth and creamy. Beat in the eggs.

Add flour, bananas, peanut butter and baking soda to a creamy mixture and mix well.

Add 6 tbsp. peanuts to peanut butter mixture and mix well.

Spoon batter into prepared loaf pan. Sprinkle with the remaining peanuts.

Bake bread until a toothpick inserted in center of bread comes out clean, about 1 hour and 10 minutes.
